For the Filet:
6~8 oz filet
1/4 tsp salt
1/8 tsp black sand pepper
2 tsp olive oil
For the Balsamico:
100ml balsamico
Step 1:
Set up the Sous Vide Precision to 131°F /55°C.
Step 2:
Season the steak with salt, pepper and oil. Place in a large zippered-lock bag and place the bag in the water bath. Set the timer for 3 hours.
Step 3:
When the timer goes off, take the bag from the water bath.
Step 4:
Remove the steak from the bag and pat dry. Heat oil and butter in a pan over medium-high heat . Add the steak to the pan and sear on the both side until brown, about 30 seconds.
Step 5:
Remove steak from the pan and let rest for five minutes before serving.
For the Balsamico:
Step 1:
Heat a saute pan over medium-high heat. Add the balsamic to the pan.
Step 2:
Bring it to a boil. Simmer, watching carefully, until it’s a little thinner than you want it—it’ll keep reducing when you take it off the heat. It should only take 2-4 minutes depending on the amount you’re reducing.
