Sous Vide Salmon Tower



For the Salmon

8~10 oz Salmon

1/4 tsp salt

1/8 tsp white pepper

1 tsp olive oil

Half lemon juice

Half orange flesh

1 tsp garlic, mashed

Half apple, small dice

For the Peas

 50 g peas

30 g celery, small dice

150g mash potato

5 tbsp sour cream

1/2 tsp salt

1/8 tsp white pepper powder


Salman Process:

Step 1:

Set the PENGFA Cook Helper at 125°F/52°C & 20 mins.

Step 2:

Put the salt, white pepper & olive oil on salmon and season it perfectly.

Then put the salmon into a zipped bag and put it into the water bath for 20 mins.

Step 3:

Peel the apple & orange and cut them into cubes.

Squeeze the lemon in order to prepare the lemon juice.

Then mix them with mashed garlic.

Step 4:

When time is up, take the zipped bag from the water bath and take the salmon out of the bag.

Drain the unnecessary liquid and cut it into several cubes around half inch.

Step 5:

Mix the salmon cubes with apple cubes, orange flesh, lemon juice & mashed garlic together.

Step 6: Prepare the mashed peas

1. Boil a pot of water and blanch the peas, Celery & potato.

2. Mash the potato.

3. Mix the peas, Celery, mashed potatoes, sour cream, salt & white pepper together.

Step 7:

Put the mashed material into a mold & put the salmon you just made into the mold afterward.

Step 8:

Remove the mold carefully then it’s ready to serve.

Note: You can eat this with bread as well. it’s delicious for sure.
